About the Coffee

There are myriad factors that contribute to great coffee, but generally, elevation equals quality. With this in mind, we set out to find (with our partners at SNAP) some of the highest elevation coffee in Ethiopia, which would also make it some of the highest elevation coffee in the world. We zeroed in on Hedeni Mature Village, which soars upwards of 2500 meters. Elevation...and quality, achieved. 

To craft this extraordinary lot, SNAP established a station in the village to purchase coffee exclusively for Wonderstate. Local farmers contributed their cherries, which were then processed at the nearby Tiluse Washing Station. They underwent meticulous hand sorting and were dried on raised beds for over 20 days. This natural process is the traditional way to take a coffee from fruit to bean, ready to be roasted, and emphasizes the distinct fruity flavors and aromas. 

Ethiopia is the genetic homeland of all coffee and is renowned for its exceptional beans. This lot from Hedeni Mature, offers an unparalleled Ethiopian coffee experience that you truly won't find anywhere else.

What We Love

This year we decided to purchase an abundance of Ethiopian coffees in order to highlight the wide range of flavor profiles available. These coffees range from the citrusy and floral, to the bold and fruity, with everything in between. Hendeni Mature is our first sundried natural selection, and boy are we starting strong. It's one of the highest elevation coffees in the entire world, is meticulously processes making for a highly expressive coffee exhibiting lush tones of watermelon and peach, finishing with piquant berries and charming floral-tea.

About the Producer

Wonderstate Coffee has partnered with SNAP PLC, a prominent Ethiopian exporter, for several harvest cycles to source outstanding coffees. SNAP owns multiple washing stations throughout Ethiopia, including the renowned Chelbessa Danche, known for producing some of the best Ethiopian coffees. This year, we collaborated with SNAP ahead of the harvest to procure coffee from Hedeni Mature, a region our founder, Caleb Nicholes, was introduced to nearly a decade ago. 

The result is a coffee that otherwise might have remained undiscovered. This selection from Hedeni Mature captures the essence of Ethiopian coffee, featuring a delightful range of flavors from subtly tropical notes to a classic blend of melon, stone fruit, and berries. Moreover, the altitudes of Hedeni Mature, soaring above 2400 meters and easily reaching 2500 meters, contribute to its exceptional quality.
