What We Love

The CODECH Cooperative continually delivers some of our favorite coffees from Latin America. Over the past two years, we've had the pleasure of visiting the cooperative, gaining insights into their journey and understanding the efforts behind their remarkable coffees. This year, Jesus Perez Juan's coffee stood out immediately, captivating us with its flavors. It became one of our top picks from the latest harvest cycle. In the cup, you'll savor the juicy fruitiness of fragrant yellow apples, followed by a rush of sweet caramel, and a playful finish of dried pineapple.

About the Producer

Located in Huehuetenango, Guatemala, the CODECH Cooperative is one of Wonderstate's largest and most important sourcing partners in the Americas. From our first meeting with the CODECH team, we recognized a shared vision: exceptional coffee quality, ecological sustainability, and a focus on farmer welfare.

This past March, we traveled through the countryside of Huehuetenango to meet with farmers from whom Wonderstate purchases coffee. Over the last several harvests, we've witnessed not only a continual rise in coffee quality but also a shift in how individual farmers envision their future. Thanks to the strong partnership between CODECH and Wonderstate, we continue to support the same groups of farmers, offering better prices each year for their consistently excellent quality.

One of the standout coffees from this harvest comes from the Q’ejnhah neighborhood, produced by Jesus Perez Juan. We've named this coffee Q’ejnhah (pronounced Kay-hay-n-ha) after the neighborhood where Don Jesus’ farm is located. Like many farmers in the area, Don Jesus did not name his farm, preferring to honor the indigenous-historical name of the land he cultivates. Although the name may be challenging to pronounce, we strive to respect the heritage of the farmers whose coffees we feature on our menu.

About the Coffee

One of the unique aspects of the CODECH Cooperative's outstanding coffees is their commitment to cultivating traditional varieties like Typica, Bourbon, and Caturra. These varieties, particularly when grown in the cool, high-elevation climates of the Q’ejnhah neighborhood, provide the distinct sweetness and layers of fruitiness found in these coffees.

Jesus Perez Juan’s selection is processed slightly differently from our typical Guatemalan coffees. After picking and sorting, the coffee cherries rest in bags overnight before continuing onto depulping and washing. This resting period before depulping (removing the fruit skins) contributes to a deeper fruit tone, expressing itself as yellow apple and dried pineapple.
